Menu Monday


Cinnamon Chips. Ever heard of them? I have not found any in several years, but as of last week my HERSHEY'S cinnamon chip drought ended!!!! WOOO HOO Last Wednesday night my sweet friend Ms. Jeanette dropped 2 lovely packages off on my doorstep!

We spoke about them last month when she joined us for supper one night! She too had heard of them and seen these illustrious gems on rare occasions. Well lo and behold she came across some and scooped them up for me! Thank so much Ms. Jeanette! This recipe is for you!

The recipe I normally make, Oatmeal Cinnamon Chip Cookies, is on the back of the package so I thought I'd share a new cookie recipe I made with these babies!

Chocolate and Cinnamon Chippers

2 sticks butter
1 Cup brown sugar
½ Cup sugar
2 eggs
1 teaspoon vanilla
3 Cups flour
1 teaspoon baking soda
¾ teaspoon salt
1 Cup cinnamon chips
1 ½ Cup chocolate chips
1. Preheat oven to 350 degrees F. In a stand or electric mixer cream the butter and sugars until light and fluffy. Beat in eggs and vanilla slowly until well combined. In a large bowl combine the flour, baking soda and salt. Slowly add to wet mixture along with the chips until just combined. Scoop onto a parchment or silpat lined baking sheet and bake for 9-11 minutes or until cooked through to your liking. Cool on cooling rack and serve.

Makes About 36 cookies
